Ingredients
- 2 eggs, beaten
- 1 large carrot, shredded
- 1 large handful shredded lettuce
- 1 medium sweet potato, roasted
- 6 rice paper sheets
- 1/3 halloumi, thinly sliced
- Avocado
- Soy/ hoisin sauce to serve
Method
Prep & Cook 60min > Serves 2 (3 rice paper rolls each)
- Add egg to a non-stick frypan and cook like an omelette. Once cooked, remove from pan and slice into long strips.
- Add halloumi to pan a cook until golden on both sides.
- Dip rice paper into a tray/bowl of warm water and remove once soft.
- Place on a plate and add lettuce, carrot, egg, sweet potato, avocado and halloumi on top.
- Fold in ends and then sides to create your roll, repeat with remaining ingredients.
- Serve with soy dipping sauce or I like to have itsu hoisin sauce with mine.
