Ingredients
- 250g porridge oats
- 100g ground almonds
- 2 ripe banana, mashed
- 1 egg, beaten
- 350ml unsweetened almond milk
- 3 tbsp maple syrup
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 pears
- 50g dates, chopped into small pieces
Method
Prep 15 > Cook 45 min > Makes: about 10
- Preheat oven to 200 C & line a 21cm square slice/cake tin with baking paper.
- Mix oats, ground almonds, baking powder, cinnamon, salt and dates in a large mixing bowl.
- In another bowl, whisk together almond milk, egg, mashed banana and maple syrup.
- Then pour wet mixture into bowl of dry ingredients.
- peal, halve and core both pears. Cut 1 pear into cubes and stir through mixture.
- Pour mixture into tin, smoothing the top.
- Slice other pear and scatter over top.
- Bake for 45 minutes, then cool completely before cutting into squares.
These are amazing served warm with greek yogurt or custard. Tastes like apple crumble. Freeze well and can be defrosted as a quick snack or dessert.
