- Preheat oven to 180 C and lightly grease a ceramic ramekin with butter or coconut oil .
- Beat eggs in a bowl with salt and pepper.
- Slightly sautéed tomato, mushroom and ham in a non stick frypan.
- Add to a ceramic ramekin with spinach and pour egg over the top (you could add a bit mozzarella at this point).
- Place in oven and cook for 10 min or until egg is cooked.
- Slice and serve with some avocado on the side.
