Prep 10 > Cook 10min (omelette) 30min (sweet potato) > Serves 1
- Preheat oven to 200 C . To a tray add sweet potato. Cover with a drizzle of olive oil, maple syrup and some cinnamon and mix so all coated. Roast for 30 min.
- Sautéed mushroom, kale and tomato in a non-stick frypan. Once softened and in eggs and sprinkle mozzarella on top.
- Once egg has almost cooked right through and bottom is golden fold omelette in half. * optional: cover with a lid to help egg cook through.
- Remove sweet potato from oven.
- Serve omelette with your sweet potato chips and enjoy! :)
