Ingredients
- 2 cups peas (canned, fresh or defrosted)
- 1 x 400ml can butter beans
- 1/2 cup spinach
- 1/3 cup corn kernels
- 1 onion, diced
- 1/2 cup Oats
- 1/2 tbsp garlic powder
- 1/2 tbsp cumin
- 1/2 tbsp Italian herbs
- 2-3 tbsp pepitas
- 3/4 cup almond meal (or gradually add some flour to help it not be so sticky)
- Salt & pepper
- olive oil spray
Method
Prep 15 > Cook 10 > Makes: about 6 patties
- Blitz oats & onion in a food processor until smooth & creamy.
- Add the spinach, peas, butter beans, spices & salt and pepper to the the food processor with the oat mix and blitz so that it is smooth but a little bit chunky if possible.
- Add mixture to a bowl, then add in corn & pepitas. Mix to combine.
- Gradually add in some almond meal or flour to make mixture less sticky.
- Cook them on the stove in a non-stick fry pan over medium heat with a little oil. until golden then flip onto other side.
*Enjoy in a bun or wrap with garlic aioli, beetroot relish, tomato cucumber and sprouts. A side of baked sweet potato chips is always a good addition too.
