Ingredients
- 1 courgette, spiralized.
- 3 cherry tomatoes, halved & roasted.
- 1/2 cup roasted sweet potato.
- 1/3 avocado.
- 1/4 cup almonds ( can use walnuts, cashews, pine nuts etc.).
- 2 handfuls of spinach or kale.
- A good squeeze of lemon juice.
Method
Prep 10 > Cook 10 > Serves 1
- Add avocado, nuts, spinach/ kale and lemon juice to a food processor. Blend until smooth and creamy.
- Put spiralized courgette, roasted sweet potato and pesto sauce into a non-stick frypan. Continuously stir so mixture is warm.
- Add in roasted tomatoes and serve.
* Occasionally I add diced pancetta to add some crunch and saltyness!
