- Add stock to a large pot bring to boil, reduce heat to simmer.
- In another large non-stick pan add a bit of olive oil, onions and garlic, and stir until onion softens.
- Once onions are soft, add in rice, apple cider vinegar, mushrooms, nutritional yeast and stir.
- After about a minute add in a ladle of stock.
- Continue to stir and gradually, one ladle at a time add in stock as liquid absorbs. *if your run out of stock add in hot water.
- Once rice is soft, with slight nuttiness, turn up heat and continuously stir to evaporate the remaining liquid.
- I like to serve mine with some crispy, roasted sweet potato on top.
