- Cook pasta in a pot of boiling water until al dente. Rinse under cold water and set aside.
- Add avocado, spinach, nutritional yeast, olive oil, lemon juice, water, salt and pepper to a food processor. Blend until smooth and creamy. (If too thick add a bit more water)
- Mix tomato, spinach, cucumber and peptita seeds into pasta, then stir in the sauce so that everything is well covered.
- Enjoy!
