Ingredients
- 2 eggs
- 1 cup oats
- 1/2 a fresh peach, cut into small pieces
- a handful of raspberries
- 1/2 cup butter, melted
- 1 tsp ground cinnamon
- 1/2 cup brown sugar
- 1 tsp vanilla essence
- 1 tsp baking powder
- 1 cup plain flour
Method
Prep 15 > Cook 15min > Makes: about 10
- Preheat oven to 180C and line a baking tray with baking paper.
- In a bowl, whisk the eggs and mix with the butter and vanilla essence.
- Add the rest of the ingredients except from the fruit and mix well.
- Gently fold in fruit.
- yield heaped spoonfuls into large cookies onto the baking tray (mixture can be a little runny so you do not need to roll into balls).
- Bake for about 15 min until lightly golden.
