Ingredients
- 2 rings of egg / buckwheat/ wholegrain noodles
- 1 cup frozen broccoli/ carrot/ cauliflower
- 2 tbs frozen peas
- 1 egg
- Silicone egg poacher (if you are not gifted in the egg poaching department)
- Olive oil spray
- Choose your favourite sauce e.g. tamari/ hoisin/ terriyaki/ satay/ Oyster even peanut butter
* Option to add avocado on top and or any vegetables that you have in your fridge.
Method
Cook 15 > Serves 1
- Bring medium size pot to the boil, reduce heat slightly.
- Lightly spray silicone egg mould with spray olive oil.
- Add egg to mould and season with a twist of salt and pepper.
- Add egg noodles and frozen veg to pot of boiling water and place egg in mould on top.
- Cover with lid to allow egg to cook through. * Keep an eye that water doesn't boil over into the egg- if it does just tip the water out.
- Once egg is cooked remove it, strain noodles and vegetables.
- Add to a bowl, stir in your sauce and pop your egg on top.
