Prep/ cook 20 > Serves 1
- Place broccoli on a tray and drizzle with a bit of olive oil, salt and pepper and roast in the oven for 15min or until crisp at 200'C.
- Meanwhile prepare salad base. Add chopped lettuce, tomato, avocado, capsicum and cucumber to a bowl.
- In a small bowl mix together the balsamic vinegar, maple syrup and a generous squeeze of lemon juice. You can adjust the ratio to your own liking.
- Dress the salad and sprinkle peptic seeds on top.
- Bring a small saucepan filled with water and rice vinegar to a simmer. Using a spoon stir water clockwise to create a whirlpool. Crack egg into a bowl, then drop into centre of saucepan. Allow to poach for 2-3 min the remove from water a drain on a paper towel.
- Remove Broccoli from oven. Place broccoli & poached egg on top of salad.

Note:: Meal prep broccoli in advance for a quick throw together meal. If you are not so confident with poaching eggs you can even fry or boil your egg.
