Method

- In a Medium bowl, whisk together the flour, sugar, baking powder and salt.
- In a small bowl, mash the banana and whisk in the eggs. Then add the milk, vanilla and whisk until well blended.
- Pour the banana mixture and the melted butter into the dry ingredients. fold the batter gently until just blended. the batter will be thick and lumpy.
- Heat a non-stick frypan to medium heat. Grease pan with 1 tbsp butter or oil and swirl it around.
- Drop batter into pan. Cook until a few holes form on the top of each pancake and the underside is golden, about 2 min. Then flip and cook until bottom is golden brown and top is puffed. Continue with remaining batter.
- Top with you favourite pancake toppings and enjoy!
- Note: If making for just myself I half the recipe.
