- Add olive oil to a pan and the onion. sautéed on low heat until soft.
- Then add the garlic, tumeric, curry powder and paprika and 2 tbsp of water and stir so that a kind of paste and flavoursome aroma is created.
- Turn up heat to medium and add in the sweet potato and mix so that everything is covered by the spices.
- Tip in the lentils, give a stir and then add in the vegetable stock. Here you can add more spices to your liking if you wish.
- Bring heat to the boil, then reduce the heat and cook for about 15 min until lentils are tender and sweet potato is soft. Please note that the lentils cook quite fast so keep an eye on it.
- Serve with naan bread, rice or both.
