Ingredients
- 1 medium sweet potato, mashed
- 1/2 cup cooked quinoa
- 1 eggs, lightly beaten
- 1/2 large brown onion, diced
- 1 clove garlic, minced
- 1/2 plain flour (you may need to add more if pattie is fragile)
- olive oil
- Optional: 1tbs nutritional yeast, salt & pepper, 2 tsp Italian herbs.
Method
Prep 15 > Cook 10 > Makes: 12 Fritters
- In a non-stick frypan with a bit of olive oil, sautéed onion & garlic until soft.
- In a large bowl add your mashed sweet potato, quinoa, beaten egg, flour, onion mixture & seasoning. Mix until well combined. (if mixture is too soft/ falling apart add a little more flour.)
- Roll mixture into balls.
- Using Same pan that you cooked the onion & garlic in add a little bit more oil. Once pan is hot, add patties & slightly flatten. Cook for 2 min or until golden then flip repeat on other side.
- Serve with your favourite salad (I served mine with a tahini dressed simple salad) & Enjoy for lunch or a light dinner.
* Idea: you could use these as a filler in a vegetarian burger or wrap.
