Prep/ cook 20min > Serves 3
- Place uncooked vermicelli noodles in a microwavable bowl covered with cold watering allow to sit for 10 min.
- Prepare vegetables as directed above and combine in a large bowl.
- Microwave, noodles for about 2min or until soft. Strain and rinse under cold water.
- Add noodles, coconut, coriander, and bean sprouts to the bowl of vegetables. Mix well.
- Add in. the rice vinegar. and peanuts. Squeeze over the juice of one lime and dress generously with the mango chilli coconut dressing. Add a little bit of salt and pepper and mix well so that all the vegetables are coated. with dressing.
- Add salad to a bowl (on top of a bed of salad leaves if you like) and place some cooked chicken breast on top.
- Enjoy this light, refreshing salad.
